Let me be clear.. I know everyone has their own way of making pulled pork, so I will just share my method, which happens to be very simple and delicious ;) I will also be sharing this recipe using the size pork loin that I used, because I have a small crock pot, and there are only two of us in this house lol.. but it still makes us a TON of leftovers!
INGREDIENTS (my measuring is estimated, spices can be tweaked to your taste)
-(1) 1.5 lb pork loin (boneless)
-BBQ sauce (store bought, homemade, your choice!)
-1/2 lemon & 1/2 orange (or 1 whole of either instead)
-1 tbsp minced garlic
-1/2 onion, sliced
-for spices: 1 tbsp salt, 1/2 tbsp pepper, 1/4 tbsp red pepper flake & 1/4 c brown sugar
-water
The easiest part, throwing it together in the crock. Place the pork loin at the bottom, toss onion, garlic, citrus (just juice each half piece & toss the whole thing in afterwards! All this stuff will come out at the end) and spices to the crock. Initially, you're just gonna add about 1/2 c of BBQ sauce to the crock, then cover with water JUST to cover the pork. Turn your crock to high for 2 hours, then to low for another 4 hours. Be careful when fishing the pork loin out at the end, because it will EASILY fall apart.. or you can use a strainer. You just want to get the liquid and solid pieces of citrus out. RESERVE 1/4-1/2 c OF THE COOKING LIQUID BEFORE STRAINING. After that's done, shred the pork with two forks on a plate, return to crock, add cooking liquid and your desired amount of BBQ sauce & mix together. That's it! :D
This is delicious mixed with pasta, served over rice, mashed potatoes, on rolls, bread, bisquits, lol.. anything. Leftovers make great lunches as well! I hope y'all have enjoyed this recipe.. I know I will be enjoying this for dinner tonight, that's for sure ^_^
