What to do.....

 Hi!! I'm currently preparing my documents for graduate school, which is due March 1st. I'm applying for a Master's degree in Applied Linguistics (TESOL). I only have one school that I really want to go to... It's kind of risky, but I'm thinking about just applying to that school.

I'm almost done with my first draft of SOP, and I hope I can get some advice on this soon too. But first.... I'm having some trouble with letters of recommendation.
I need three in total, so I was planning to have 2 written by my former professors who are in the field of linguistics and 1 from my former employer. I thought I would need one to show that I have experience in the field of teaching. My former employer is a private tutoring company, and I used to work for them as an English tutor throughout my 4 years of undergraduate years. I graduated two years ago and work in a different company, which has nothing to do with education or teaching English. I had been keeping in touch with them, and keeping a good relationship. However, I just found out that all of the staff who could write recommendation letters in English (I live in Japan) left the company a month ago. Now, the only people left are people who I don't even know and can't speak English...

So now I'm thinking, "What am I going to do with my letters of recommendation??"

What do you think about having three professors write my letters of recommendation (2 from the linguistic field, 1 from a totally different field. He knows me well, since he was my teacher for one of my compulsory courses)?
Should I ask the former staff from the tutoring company, even though they work in a different company, which has nothing to do with education or linguistics??

I understand letters of recommendation are important, and I'm really determined to start studying from fall 2011.
