I haven't had one of these in a long time, but I feel like sharing some of the food I've been making lately.
All my free time this semester means I can troll Pinterest and watch Food Network for hours. This means I pick up handy tips from Ina Garten, Anne Burrell, and others. For instance, don't put the onions and garlic in the skillet at the same time. Let the onions become clear and then add the garlic. This prevents the garlic from burning.
I've also finally determined the right amount of salt to include in seasonings for fried chicken.

Chicken and pasta casserole. Typically made with egg noodles, I used penne and another random type of macaroni product and it was AMAZING.
I may eat another bowl later it was so good. I put peas and carrots in it as well. I used baby carrots, so I had to saute them for a long time for the carrots to be soft enough, but I'm sure if I bought carrots in a can I wouldn't have that problem. To quote Matt "You have outdone yourself tonight."
I'm also thinking about starting a food blog in grad school. I love cooking, it helps me relieve stress, and it would be a fun way to connect with my family and give Matt all the recipes I make.
