I figured out the secret ingredient that made my first batch of seitan so damn yummy!! It was the lemon-pepper seasoning I used in place of lemon zest! It's actually a sort of lemon-lime seasoning with pepper and salt and sugar n'stuff... it really adds a kick! Everything else is basically the recipe from The PPK, other than I cut it into patty shapes and brown them on both sides before simmering.

The best tasting vegan bugers or tortilla roll-ups (with veganaise, lettuce, and tomato).
