Even though I have been out of my dad's house in FL for the past year already, this is my first time really living alone. No roommates, I don't even know any of my neighbors yet.I haven't met any other students who live alone, and I'm really beginning to see why no one makes this decision (other than the obvious $$ benefits.) It's lonely. I'M LONELY
Having a closed off space to be alone in only increases the reasons that I am feeling lonely. It keep's me inside, thriving off the english words of my books and computer screen. I don't touch the TV, that could make things really ugly. But these little mental get aways are keeping me from being in this environment 100% of the time. Exactly a year ago on a 3 week backpacking trip I was given a small area to sit in for three days without my camera, books or food..no distractions from the environment except my pen and paper. It was such a purifying experience. I'm not about to fast or refuse to look at the english language here, but I really need to stop sitting in this apartment between classes.
Well... that is all afterthoughts. The real reason I decided to post this morning is I just made the most AMAZING breakfast and I have no one to gloat too and share with. Pathetic? Lonely? I know. But hey I'm getting pretty good at making some Mexican dishes..
Chilaquiles, also known as 'the poor man's dish', is a typical way for Mexican's to get rid of leftovers. The dish can have meat, eggs, vegetables, beans....anything in it really...the main identifying ingredient in it though is deep fried stale corn tortillas soaked in salsa. (I left half a kilo of tortillas out 2 days ago so I will probably be eating chilaquiles for a while..)The type of salsa can vary as well (in Spanish "salsa" just means sauce in general.) I made them with broccoli, onions, tomatoes, eggs, queso fresco, and my favorite sauce around "Chimachuri." It is kind of like an extra spicy mayonnaise, but not exactly.. it's hard to explain.
Well - time for spanish class. By the way my professor did not show up for the 7 am class AGAIN and we had a test for 'plantas de tratamiento'... gracias a dios that no one finished in time and he is letting us take it home for the weekend. With the magic of the internet and the amount of hours in 4 days I should be okay, but this is not going to be easy/fun
