To start, I'm going to post a funny salad I just made with Memorial Day (U.S. holiday yesterday) leftover barbecue ingredients. When I was growing up and we had leftover steak or hamburgers, my mom always made "meat salad" -- just a single-serving bowl of cut up meat, mixed with mayo and whatever sounded good at the time. As I was just looking at the leftover burgers, I thought:
Dice a hamburger
Cut corn off leftover corn-on-the-cob
Cut up little dill pickles
Cut up tomato
Add lettuce
Mix with mayo, salt and pepper
It's a funny little combination, but it works and is cool on a beautiful summer day. Is my mom the only person who made/makes "meat salad"? It sounds so funny but is so good!
