I had some chicken already cooked that just wasn't making itself into
cashew chicken salad, and a bunch of roma tomatoes (sale at the grocery store), so here's what I did:
Heat 2 cloves of garlic in olive oil
Dice tomatoes and add to the pan
Spices: oregano, basil, lots of salt and pepper
Dash of tarragon vinegar
Cube the chicken and add to the pan
Eat it over pasta of choice with fresh parmesan.
YUM!
Am now thinking that capers and a bit of wine would have been good in the sauce too :)
. . . and for some reason, this makes me laugh: I was so tired when the alarm went off (5:00) this morning (HOW TIRED WERE YOU?) that I sat on the toilet lid! Fortunately, I noticed it right away. *g*
