I am an undergrad student studying primarily cultural anthropology. My main areas of subject are Asian American studies and racial/ethnic dynamics, and I've been in the Philippines for one month trying to find a research subject for my senior thesis next year. I was planning to do something on mestizo/as, but lately I've been steered into different fields of study that I know nothing about, mainly the anthropology of food and business.
I'm looking to answer this question: Why aren't Filipino food restaurants as popular in America as other Asian cuisine restaurants?
I'm focusing primarily in my region (namely, Virginia/Washington DC). At any rate, I was wondering if people knew any sources (whether books, films, other media, people, etc.) where I could find information on any of the following: Philippine/Asian cuisine, the mechanics of the restaurant industry, American attitudes towards food, Philippine/Asian food stereotypes in America... anything related to these!
As a bonus, for one of my other classes, I get to research the history of "exotic" (I dislike that word) foods of the Philippines, like pinikpikan, balut, birds nest soup from Palawan, that stew where they cook the goat in its own vomit... if anyone knew any resources that mentioned the history or production of those, that would also be greatly appreciated. (So far googling it reveals episodes of Fear Factor, and Jstor sends me to information about deforestation...)
