Kurogane is quite the temperamental type, though he likes to appear fairly stoic and indifferent. Likely to start shouting when embarrassed or teased by Fay and Mokona (though these two things aren't mutually exclusive) but he's also likely to just go into a sulk, particularly when he's angry at someone he can't shout at- mainly girls, it seems. He's never shown to get really angry at Sakura, and only snaps at Tomoyo, Souma and Amaterasu when he's angry at them (except for when Tomoyo was sending him to another world, when panic might have had something to do with it). He can be quite rude, as he doesn't seem to care much about what kind of impression he makes on other people, and has little patience.
Despite the fact that he gets angry easily, is kinda scary, and really tough-acting, Kurogane is actually a really nice guy. He cares about people that he respects or thinks might need his protection. He doesn't like to show that he cares but will still do his best to quietly give advice and protect them. That said, if he genuinely doesn't like you it's probably a good idea to start running, because the puppy is not all bark and no bite. He's incredibly powerful and acts under the understanding that if you use violence against someone else, you can't complain if he beats the shit out of you or kills you, before Tomoyo put her “curse” on him. He's not the type to attack unprovoked, but if you're being really annoying and he's stressed out about something (like his not!daughter being kidnapped, for instance), then you might be in trouble.
Kurogane is also actually quite intelligent, though he has his (frequent) moments of brickheadedness. He's pretty observant, misses little to nothing in a fight, and you'll have a very hard time lying to him. He's also pretty honest himself, so long as it doesn't compromise his bad boy image (then he just starts shouting and blushing).
There have been instances in canon where it's been clear that Kurogane's fairly traumatic past has a strong hold over him (he gets particularly upset about people being eaten by monsters and gets a fairly crazy expression at the thought of revenge) but tends to appear fairly stable and indifferent to everything, while having moved on from the past. He acts quite focused on living in the present and looking forward, an idea he does his best to impart on both Syaoran and Fay, and seems to be doing a pretty good job of that himself unless he's reminded of his past somehow.
Basically, Kurogane is a very strong individual, both physically and emotionally, a nice guy and also really grumpy.

First-Person Sample:
How the hell does this thing even work? What's the point of so many buttons when you can't even get it to turn- there. Oi! Can anyone hear me through this thing? Where the hell did the others go? How many times are we gonna keep getting seperated? Soon as I see that meat bun, I'm gonna pound it into mochi. Kid, princess, mage, if you can hear this, let me know. If not, I guess I'm on my own for now. [No, this doesn't bother me at all, can't you tell? I'm totally not worried about them. Tch.]
Why the hell is it so hot, anyway? [Didn't bother sticking around near the Convention Center and is wandering off into the city. Unless someone stops him, he'll be passing out from the heat soon enough.]
Third-Person Sample:
Giving up on just smashing a hole through the metal walls- if he had to hear one more overblown description of their inevitable death from the mage he might actually kill him- and giving up on ever getting out of this damn elevator before the “elektricyitian” or whatever he was called showed up, Kurogane sat down on the elevator floor and sulked. Except ninjas like Kurogane didn't sulk, they waited in a bad mood and definitely weren't sulking or pouting in any way shape or form. So it would be more accurate to say Kurogane waited calmly on the floor, in no particular mood whatsoever. He could be patient. Even if the damn mage couldn't.
Getting separated from the kids was annoying for several reasons. The main number one reason being that it meant he was stuck with the mage, the meatbun or possibly both. In this case he'd gotten “lucky” and ended up with just the mage. It was also annoying because who knew what kind of trouble they were getting into on their own, though knowing Syaoran they'd probably already found the princesses feather and were busy guilt tripping it out of the owner of the building they knew had it. Hell, by now the princess might already be asleep.
Kurogane hoped Syaoran would not just assume he and Fay had already returned to the hotel on their own, and head in that direction with Mokona. He had a feeling that if that happened, they might be out of the meatbun's range and while Fay speaking an alien language was only slightly more difficult to understand than Fay speaking Japanese (or what sounded like Japanese), it was twice as annoying. Damnit, he hadn't signed up for this kind of crap. He had been doing his job, protecting Tomoyo-hime, killing a few assholes, and somehow that made him deserve this kind of shitty vacation?
Glancing over at Fay, Kurogane noted that he had been suspiciously silent ever since Kurogane agreed to not mess with the machinery neither of them understood and to not possibly kill them both. Though Kurogane knew this couldn't possibly last and that the mage would probably start singing or calling him names or God knew what at any moment, he still had hope that the mage would be happy to sit in silence. A small hope.
