So I mentioned I was making lemon poppyseed cake today, and the response was 'ooh, YUM,' so I shall share my recipe which is not so much passed down in the family for generations as stolen from a newspaper recipe about 30 years ago by my mother.
Regardless, it is my favourite cake in the entire world even though it's cheater's cake and there is no chocolate involved.
1 box white cake mix
1 box (4 servings) lemon pudding mix. (You can use vanilla, but why would you?)
4 eggs
1 cup water
1/3 cup oil
3 T poppy seeds.
Mix, mix, mix.
Bake at 350deg F in a greased 12 cup Bundt pan for 55-60 minutes or in two 6 cup Bundt pands for 35 minutes.
Make sure not to overbake at all. It gets dried out really quickly and that's just no good.
Let cool on cooling racks and ENJOY.
You can make a glaze of lemon juice and powered sugar to put over the top, but I usually don't. It makes the cake too sweet for me and is just more work than I want. If I want to put work into baking, I'm not making cheater's cake. :D
And I probably don't need to say it, cause y'all aren't as dumb as I am but don't eat too much of it or it does ouchy things to your stomach. (What? I had just moved out of my parents' house and wanted to eat a WHOLE CAKE by myself. I learned the lesson of gluttony though...)
