5. A recipe of treats for your Valentine:
Candied Pecans
1 cup pecan halves
1/4 cup brown sugar
1 tbsp olive oil
1 tbsp sherry vinegar or balsamic vinegar
generous pinch of rosemary, minced small (optional)
Heat oven to 350 degrees, spread pecans in a single layer on a cookie sheet, and toast until fragrant. (I set a timer for 5 minutes, check and stir, then go another 5 minutes or so). You can skip this step if you're pressed for time. (I've never seen a recipe that includes it, but I think the results are better with pretoasting.)
While the pecans toast, in a skillet mix the brown sugar, olive oil, vinegar and rosemary and stir together over medium heat until the sugar melts and the mixture is bubbling.
Fold pecans into the mixture and stir to coat. Keep stirring as they cook for about 5 minutes. (Some recipes say this is the point where you "toast" the pecans, but I don't think it's enough time, that's why I toast them first.)
Turn the pecans out onto a baking sheet lined with parchment, waxed paper or a silicone baking mat. Separate the pecans using a pair of forks to pull them apart. Allow to cool and store in an airtight container for up to 1 month. You won't be able to keep them that long, though.
