Kale, a Rant

I am at a loss to understand the obsession with kale. Why do people want to eat kale? It is tough, bitter, dull, and in restaurants, grossly overpriced. Kale is for feeding livestock, not people. If one wants dark green, leafy vegetables, high in fibre and vitamins, there are many better-tasting ones available in any city with a respectable East Asian population. I understand that not everywhere would be in that happy state, but the kale thing seems to be a metropolitan thing, most prevalent in places where spinach, watercress, amaranth, bak choy, choi sum, kai lan, and many similar vegetables intended from the beginning for consumption by human beings, not cows, would in any case be widely available.

Kale. Baffling.
