Or a recipe to use old rice which has been siting in the icebox for more than 3 days and is hard and microwaving can not relaly revive it.
Ingredients:
Old non sticky rice, pref hardened.
2 sliced green chillies
1 tsp crushed garlic
1 tsp chopped ginger or a dash of ginger power (whichever is at hand)
1/2 cup of chopped onions
1 chopped pepper, if available
1/4 cup of peas, if available
Any other dry veggies
2 tbsp soy sauce
Oil to coat the surface of the Wok
Method:
1. Heat the wok super high (I was using the hawkins non stick kadahi and heated in for about a min on high gas-flame).
2. Add the oil to coat the surface of the wok.
3. remove it from flame and add the ginger, garlic and chillies. Stir vigorously.
4. Put the wok back on the flame, add the vegetables and onions. Keep stirring for another minute.
5. Add the rice. Make sure there are no rice blocks - use hands to break these up before adding the rice to the wok.
6. Let the rice dance in the wok for a couple of minutes. It likes getting stuck, so do keep an eye out for that and keep stirring.
7. Add the soy sauce and mix everything well.
In about 15 minutes from start(how about we make friend rice- thought) to finish (the counter is now clear of all the ingredients), this amazingly simple but delicious quickie fried rice is done!
