Salmon!

Guys, I'm in love. With my husband. Cuz he's awesome. And cooks me salmon.

He baked two salmon fillets today, one with olive oil and oregano and a bit of kosher salt, the other with a teriyaki glaze (with oh so much ginger), both topped with onions. They were heavenly. And we found a particularly good avocado for the salad, which was fortuitous, because it made it worthwhile to stop eating salmon long enough to eat salad. But oh my goodness, guys. Seriously, it was phenomenal.

It was not the best salmon I have ever eaten. That was the salmon in rose-infused lemon piccata sauce that he made for valentine's day last year. This was slightly more cooked than that, but still amazingly good. And there was TWO of them! And the onions were just the right degree of cookedness - still slightly crispy, but infused with the juices from the salmon and olive oil (and carmelized soy sauce on the other one). The only thing that would have been better is if we'd thought to top them with the ramps we had gathered.

After dinner our neighbor came by with a homemade jar of pickled ramp bulbs. They look awesome. Remind me to do something nice for her.

Man. I love salmon so much. I seriously went into food euphoria mode. Guys, seriously, marry a guy who cooks good salmon. Or a girl. What's important is: good salmon.
