Eboshi does have ideals, but know what it means to be realistic about approaching them. "I plan things out if they're important and I tend to think things through in general, but I can still act impulsive if I just don't care regardless. Often in day-to-day actions, I'll consider all the possibilities, but still do something reckless when it comes to the short term." fits really well with her too. She can be more cynical at times, tends to have a preference for being something of a background leader when she can (though she is more than capable of stepping in and taking the lead if no one else is willing to do so or she feels it is for the best in a situation), is more introverted when it comes to her private thoughts on things, is more independent, is very persistent when she feels strongly about something but is rather laid-back about everything else, and she's confident when she knows she is good at something.

Eboshi's thoughts on conflict seem to match your own rather well: she dislikes certain types, but appreciates others (she's always up for a good debate, but anything she views as senseless fighting is just pointless and should be dealt with as quickly as possible). She'd at least probably say something if someone cut in front of her in line too, and your entire response to the "world-altering battle" scenario really fits with her character and story in Princess Mononoke to me too. I could see her in your thoughts on the optional fight too: "Maybe. I like a challenge, but I'm not really the type to start a physical fight for it. I think it would depend on how much the enemy annoys me." given her reactions to some of the situations in the film. ♥ :D
