I have another post I've been meaning to write about my fun trip over the weekend to Crater Lake, but it'll have to wait because I made pancakes.
Joie and I picked up some whole wheat pancake mix at the co-op the other day. My brother wrote an inspiring food blog post about
waffle sandwiches that had my mouth watering and me wishing that I lived near him, at least on Sunday mornings when I would be able to go to his place and have him cook me breakfast.
Unfortunately I don't live near Baltimore anymore and had neither the waffle iron nor my tostino machine that James borrowed from my mom's house. But I did have pancake batter and a next door neighbor named
Fred Meyer who gave me some Nutella for only $3.49.
I was suffering from cramps this morning which always makes me a little shakey and light headed, but I was determined. I mixed up the batter with a little water to the proper consistency, and fried up a few pancakes in no time.
I washed and hulled the rest of the strawberries from yesterday's trip to the farmer's market and cut up one ripe banana.
I spread a bit of nutella on the first pancake and squished a few banana slices on top. For the next one I covered the nutella with strawberry slices. I used my fingers to eat my open faced pancake sandwiches. It was the best thing I've ever eaten.
I wonder if Nutella tastes better in the Northwest because the climate and environment is more like Germany, where the product was invented. In any case, I don't think I've ever discovered a better use for Nutella than these little "sandwiches" that I ate today, and I don't even miss the fact that I haven't had the original waffle version.
