- Preheat oven to 350ºF and line muffin cups.
- Mix in larger bowl:
- 1¼ cup ww flour
- ¼ cup oat flour
- ½ cup brown sugar
- ¼ cup chopped walnuts
- 1 tsp salt
- ½ tsp cinnamon
- 1 tsp coriander
- 1 tsp ginger
- 1½ tsp baking powder
- Mix in smaller bowl:
- 2 mashed bananas
- 1 cup milk and/or water
- 1 egg
- Pour smaller bowl into larger.
- Stir them together, but don't overmix.
- Bake 20-30 minutes.
Notes:
Previous (apple) muffins stuck to the papers like crazy. I think it was the lack of fat (besides the egg) in the recipe. So did these, probably same reason.
