Preheat oven to 350º and line or grease muffin cups.
Mix together:
- 2 cups whole wheat flour
- ½ cup brown sugar
- ¼ cup oat bran (optional)
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 egg (or equivalent)
- 1 cup water
- ½ cup plain yogurt (only for acidity and moisture, not thickness, so soured "milk" should work fine)
- 3 small chopped apples (1½-2 cups)
Bake 15-25 minutes.
Sticks very well to the cups. Almost a pudding.
