I baked last week, and have only just remembered I took photos and meant to post them here.
D'oh.
Anyhoo. I made Vanilla Cupcakes with Vanilla icing, and they weren't bad even if I say so myself...
There's two of them. In total, the mix made 24 cupcakes. I would normally make it as one big cake, but the cupcake option just seemed better in terms of transportation and portion size this time. I do have a tendency to cut HUGE slices of cake, so at least with a cupcake you are fairly regimented in how much you are given in one hit.
Having said that, the icing recipe given is enough to ice a 9" cake, inbetween the two halves and all over the top and sides. So I still had half a bowl of icing left after covering all 24 cupcakes, meaning that some of them did have an inordinate amount of icing on the top. I think in some cases the icing was thicker than the sponge. Mind you, it is lovely icing so I'm not sure it's necessarily a bad thing...
Yeeeeeeeah. See what I mean about the icing?!
