Spinach and Goat's Cheese Pasta

Had a real struggle remembering how to cook this tonight, so am posting it for the record. It's a really good thing for when you're tired/run down, because it's dead easy and quick to make, but is also good and healthy.

1/2 a standard supermarket pack spinach
3 large mushrooms, finely sliced
2 small cloves garlic, chopped
one small pack soft goat's cheese
tsp nutmeg
salt and pepper to taste
spaghetti for two/three
parmesan
EDIT: Pine nuts are lovely in this too!

Cook the mushrooms on a high heat in some olive oil with salt and pepper until they are cooked well and dark. Turn the heat down, add the garlic and cook for another minute or so. Wash the spinach and add to the pan (heat up again), alongside the nutmeg and more salt and pepper. The spinach will take a few minutes to wilt, cook off the water in it. Turn heat back down and melt the goat's cheese into it.

As soon as the cheese is melted, stir the sauce into pasta (if it seems too solid, add a bit of milk) and serve with lots of parmesan.
