We made this yesterday. It was too salty to suit me but I think Robear's wife put in twice as much salt as she was supposed to. That's what she said to me before she simply couldn't make up her mind if she had or hadn't. (Typical of her as she loves salt and doesn't care if anyone else does or not.)Just what Robear needs since he's on blood pressure medication. I personally think the salt in the prepared pesto would have been enough but that's me. Other than being too salty this was a really great meatloaf. We substituted low carb bread for the prepared bread crumbs. Enjoy! Blessed Be, Angelique

Turkey Meatloaf with Pesto and Spinach
For a delicious twist on the traditional meatloaf, try this turkey version. Prepared pesto and oregano add lots of flavor.
ingredients
1 pound ground turkey
1 (10 ounce) package frozen spinach, thawed
1/2 cup Atkins Bread Crumbs atkins.com/food/recipes/a...umbs.html
1 egg, beaten
3 tablespoons prepared pesto
1/4 cup cream
1 garlic cloves, pushed through a press
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
directions
1.Heat oven to 375°F. In a large bowl, combine turkey and spinach until well blended. Mix in remaining ingredients.
2.Transfer mixture to a loaf pan. Bake 45-50 minutes, until an instant read thermometer inserted in center registers 160°F. Cool 5 minutes before cutting into slices.
