Since I am pretty into eating healthy lately (and am insanely bored right now), I thought I'd post what I had for dinner tonight.
I cooked brown rice in low-sodium chicken broth. When it was finished, I topped 1 cup of the brown rice with 1/2 cup of black beans (canned) and 3 oz of Oscar Mayer pre-cooked southwestern chicken breast pieces (in the refrigerator section of the grocery store).
It was very, very good (think chicken burrito without the tortilla) and 100% healthy (unless you count the preservatives in the chicken, which I don't). It could only have been better if I had added cheese, but I didn't have any reduced-fat shredded cheese in the fridge tonight. And I don't think I'll be hungry again until lunch tomorrow.
So anyway, cooking and eating healthy is a big part of my life, now. I'm trying new things all the time which is really fun!
I ordered a Bento box today for taking lunches to work. If you don't know what a Bento box is, it's a traditional Japanese food container that encourages correct portion sizes and food variety. Most people use Bentos to create food that is truly a work of art. I plan to use mine to pack food that is correctly portioned and is in a "fun" little container. Those of you who are into Asian culture (as I am lately) might really enjoy checking them out. Two good sites are www.lunchinabox.net and www.bentocorner.com.
