If I eat more than a small amount of milk/cream then Very Bad Things happen. But I can have a cup of tea with a small splosh of milk and all I get is rumblings, so I'll do that occasionally, because I like milky tea.
Similarly, lots of the issues I have depend on how I've been eating recently. So far as I can tell, I can eat low levels of things for several days (if I've been behaving before that) and my stomach just gets a bit inflamed. So I might have a fried breakfast with the gluten-free bread (or no bread), but still have the haggis, because I know what my tolerances are.
And this is what my dietician told me to do - I cut everything out for two months, and then reintroduced different things at different times, to see where my tolerances are, and what I can do without it causing problems for me. (And I'm very grateful that I'm not celiac, because I really, really, didn't want to have to be _that_ careful all the time.)
Allergies can be very different. I'll eat a little chocolate even though it'll give me a nasty headache. Shrimp I won't, because it'll kill me if I'm not fast enough with the epi-pen. Ultimately it's up to the individual to decide how much of a risk they're willing to take. (Another thing I see is no understanding of oral allergy syndrome. Yes, some people are allergic to raw tomatoes and can eat ketchup just fine, fast food workers of the world!)
I used to have a raw tomato allergy. They brought me out in a nasty rash that lasted for several weeks. Cooked was fine. My Mum took matters into her own hands and fed me a tiny bit every day. Now as long as I don't avoid raw tomato for too long I can eat it no problem. I can't eat bell peppers raw or cooked. Same thing happens. I suppose I could build up a tolerance but they're so disgusting and I'd have to eat them Every Single Day. Do Not Want.
Kiwi fruit is also problematic as are some E numbers. MSG gives me a migraine and to anyone thinking of testing that my boyfriend has beaten you to it. Twice. Accidentally. The scariest reaction is to the 500ml bottles of mango Rubicon. I can drink the canned stuff but the 500ml bottled stuff makes my tongue start to swell. I spat it out, rinsed with water, took an antihistamine and it settled down. I'm definitely not touching that stuff again.

I remember the girl looking longingly at a brownie at dessert and the counselor saying "I'm not going to stop you, but you'll really regret it."
Which made me realize "Oh, she can eat it if she really wants it, she'll just feel super gross later. Allergies must work that way for some people."
And I was Not An Asshole forevermore. At least on this subject.
I don't understand why it's such a difficult concept for some people. :(
