You're staying in the wrong motels in North America -- everyplace seems to have a free continental breakfast, and often a basic hot breakfast, these days. Except the 4/5 star ones in SF -- if you can afford them, you can afford to pay for breakfast, must be their attitude....
I really need a list! Because so far this year it's hotels in NY, Toronto, Baltimore, San Diego, and Edmonton -- no included breakfast. Vertmont did but we were in a Holiday Inn Express and that's part of their schtick (and higher room rate) The German breakfast was a full and extensive all you can eat buffet. Very varied and tasty!
I usually use the Garden Inns -- reasonable variety, but not extensive, unless they have competition in the area competing with a great breakfast. Have you checked into B&Bs in the areas? Often they offer a very nice breakfast -- can even cater to food allergies, if they know in advance.
Ah -- I forgot that you have actual home ones up there. Down here they vary -- you can find ones where they are a separate building, more like a townhouse. I stayed in a nice one in Fredericksburg like that. But not a choice if that bothers you.
