cooking up a storm

I was just cooking for about 4 hours, but the good news is that we're set for the week. Normally, I don't plan so much cooking, but I'm trying to get more vegetables into our diet, which kind of means double the work. Here's what I made:

Niku Miso from Just One Cookbook
Rice
Kalua Pork
Macaroni Salad
Ginger Carrot Cabbage

The Niku Miso is really good, and I'll probably end up making that again. I probably prefer the usual zucchini bolognese, though, since my style is really more about set it and forget it.

My macaroni salad did not turn out great because it was the last thing I made, and I was so tired that I just sort of threw everything together. If you're going to be lazy with something, pasta is definitely the place to slack off since it'll probably be good either way. It's an ex-coworker's recipe, so I can't share it, but it's probably pretty standard.

The Ginger Carrot Cabbage is pretty good, but I think it's a bit too strongly flavored. We'll see if it mellows out in the fridge and if it sits well for the week. I used 2 heads of cabbage and a bag of pre-shredded carrots. I had to use our big soup pot because none of our other pots or pans would fit all that cabbage.
