chicken bacon ranch ...and cheese

These are our lunch boxes for the week. Chicken bacon ranch with broccoli (I'm so proud I didn't put this on top of potatoes, which would have been so tasty).

The recipe was a little confusing because it said to remove 2/3 cup of the cooking liquid and then add the cream cheese. It didn't say to add the cream cheese to the remainder of the cooking liquid or the liquid that was removed. Either way, I didn't have enough kefir cream cheese to make the ranch sauce thick and dreamy, so I added some shredded cheese on top of each batch. I made other modifications too, including doubling the amount of ingredients. The recipe also said to cook the bacon in the pot and then dump the broth and chicken in there, but I wanted the bacon to stay crispy, so I decided to cook it separately. I also used my homemade ranch mix for this.

I think the chicken dried out a bit. Next time I will only cook for 10 minutes. Because of that and the sauce, I don't think this lunch will be as tasty as last week, but we'll see. I also have been having headaches lately, and I don't know if it's from lack of sleep and stress, or from the increased consumption of dairy. I want to make a lot of cheese this weekend, so maybe I'll take a break from kefir this week and see if that alleviates the headaches. If it does, I'll be really sad that I can't continue my kefir milk fun.
