hazelnut chocolate chip things

I made these Hazelnut Chocolate Chip Cookies over the weekend, and they turned out delicious. I had to substitute cashew butter in place of almond butter because of my sensitivity to almonds, but the cookies turned out great. They also kept really well in an airtight container and stayed soft and moist.

I decided to try making them into a sort of breakfast protein bar. I haven't found a lot of options for breakfast -- partly because I can't eat eggs, partly because I don't want to eat simple carbs or fruit for breakfast, and partly because I am picky. So I double the recipe but used the original amount of sugar and added 1/3 cup of shredded coconut. I also used fewer chocolate chips just on top instead of mixed in because I sometimes have a reaction to chocolate.
