peanut butter oatmeal chocolate chip cookies

I can't believe I've never posted these Nutty for Oats cookies from the King Arthur Flour Whole Grain Baking book. This is one of few recipes from this book that I've made multiple times. It uses old-fashioned rolled oats and oat flour. This recipe is a real winner; plus it only needs one mixing bowl to make. Today I doubled the recipe for our trip this weekend. We are going to the snow for the weekend with about a dozen other people.

I haven't baked anything in a while so I was a little nervous. I haven't made these particular cookies for a few years, so I've forgotten what they look like when they are baked. I also forgot that they don't flatten out when they bake like most cookies do, so my first batch came out all rounded and took about 5 minutes longer. I flattened the rest with the back of a tablespoon for easier storage and faster baking.

The cookies actually do not taste like I remember them, but I'll have DH try some when he gets home. I could just be remembering wrong. Or maybe I'm being overly critical of myself. I do that sometimes. I will try to update later.
