I found this
artichoke chicken recipe and wanted to try it because it's basically artichoke dip smothered on chicken, and I need a win. Because this will be the third chicken recipe I've tried in the last 2 weeks, and I was disappointed with the first two. Third time's a charm, right?
Anyway I also broiled this on the middle rack on the Lo setting for about 8 minutes. It turned out pretty good. I might make it again cause it was pretty easy and only needed a bowl and a pan.
I didn't have parmesan cheese, so I just used an Italian blend of cheese. But I didn't even have enough of that, so I threw in some Mexican blend also. These cheeses were both shredded, but I threw them in my little Cuisinart stick blender and made it sort of grated. I also used the Cuisinart for the artichokes. If you don't overload the bowl, the food actually comes out fairly uniform. I use it for when I make artichoke dip also. I'm excited to use my stick blender and its accessories more and more often, even after owning it for 7+ years.
