pulled pork burrito bowls

My mom is in town for the night, and she wanted to have dinner at home rather than going out. I decided to just make the easy pulled pork that I usually make. We had only about 4 hours to cook it rather than the recommended 6 hours, so I cut the pork in half to cook it faster and increased the temperature to 350°F instead of 300°F. Also, this time I did not have brand name Dr Pepper, so I used Dr Snap from Whole Foods. I'm not sure why, but that name makes me laugh.

Served with cilantro lime rice, beans fried in bacon fat, salsa, cheese, and sour cream, this pork is so tasty, not to mention versatile. Once the rice and beans are gone, we make quesadillas, sandwiches and nachos with the ample leftovers.
