cannelli and sausage stew

This stew is very loosely based on this recipe. I've never been very good at looking at what I have in my kitchen and making a meal (that isn't completely ghetto) out of it, but I'm determined to get better at it. We have so much food in our cabinets that isn't being eaten and the expiration dates must be approaching.

I had beans and tomatoes in the cabinet, andouille sausage in the fridge and corn in the freezer. Toss in some tomato juice, a little water and some herbs and spices, and here it is. DH enjoyed it, but he had parmesan cheese on his and I didn't. I thought it was okay. I added the pasta since I knew we'd be having this for lunch tomorrow, but next time I will just have the stew for dinner and no pasta. Also, I should have added the beans later to prevent the mushiness.

Too bad I don't get to use my new bento swag for this one, but I'm proud of myself for not eating out tonight.
