This is a good cookie recipe.
Soft mocha chocolate chip sugar cookies
Cookie:
1/2 cup shortening
1/2 granulated sugar
1/2 cup brown sugar
1 egg
3/4 cup buttermilk
1 tsp vanilla
2 cups all-purpose flour
1/4 cup instant mocha coffee powder. I used one of the General Foods International coffee mixes (dark mayan chocolate in case you care) but I think anything similar would work.
1 package (12 oz) miniature semi-sweet chocolate chips
1/2 tsp baking soda
1/2 tsp salt
Topping:
1/3 cup granulated sugar
4 tsp instant mocha coffee powder
Cream the shortening, sugar, and brown sugar together until smooth. Mix in the egg, again mix until smooth. Add buttermilk and vanilla; mix again until smooth.
In a separate bowl, mix together the flour, coffee, chocolate chips, baking soda, and salt. Once thoroughly mixed, add this into the shortening mixture.
Chill in the refrigerator for 1 hour.
Drop by rounded spoonfuls onto a cookie sheet, then smash each cookie flat with a moistened fork. Seriously, these will puff up in the oven, so make them about the same thickness as one of the chocolate chips. Mix the topping ingredients and sprinkle it over the smashed cookies.
Bake at 400 degrees for 7-9 minutes.
Makes 5-6 dozen depending on how big you make your cookies.
These are quite delicious - like chocolate chip cookies but softer - and it's a good recipe for people who tend to eat their batter raw. The batter doesn't taste so hot until it's baked, so you probably won't eat much of it.
