maybe i'll find this again when i need it if i put it here.
marinade for 3 lbs brisket
1 tsp. mustard seed (smash some up)
1 tsp. whole cloves
1 1/4 tsp. juniper berries
1 tsp. ground ginger
1 whole bay leaf
2 tsp. peppercorns
1/4 apple cider vinegar (use 1/3 if you only have 2 days to marinate)
add water equal to amount of vinegar
1 cup good red wine
bring all ingredients to a simmer on medium heat. let cool.
marinate brisket for at least two days, preferably 3. turn meat occasionally.
