[recipe] Hong Kong Egg Waffle

5 eggs (separated)
3/4 cup milk
1 1/4 cup flour
1 Tb vanilla
3/4 cup sugar
1 1/2 ts baking powder
3/4 stick (6 Tb) butter (melted)


half sugar added to egg whites -- whip to medium peaks
half sugar added to egg yolks.
add melted butter to yolk+sugar mixture
then add milk and vanilla. mix
add flour and baking powder. mix well, until there are no lumps.

fold in whipped egg whites in two stages until fully incorporated.

preheat pans on medium heat. brush with oil (or coat with pam).

add approx 3/4s of a cup of batter to middle of fancy egg waffle pan, put the two half of the pan together, and flip. cook for 1.5 - 2 min. flip. cook on other side approx same time.

put waffle on cooling rack approx 1 min to crisp up.
