Vegan Banana Bread
3 Ripe bananas
1 TBSP lemon juice
1/2 cup oil
1/2 cup brown sugar (or sweetener of your choice)
1/2 cup raisins
1/4 cup walnut pieces
1-1/2 cups all-purpose flour
1/2 cup oatmeal
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
Preheat oven to 375˚. Lightly oil a loaf pan and set aside.
In a small bowl, mash the bananas with a fork until very mushy. Add lemon juice, sugar, oil, raisins and walnuts. Stir together and set aside.
In a separate, large bowl, Stir together the remaining ingredients. Add the banana mixture to the flour mixture. Stir until "just mixed."
Pour into loaf pan and bake 40-50 min.
If you want to add a Streusel topping:
1/4 cup brown sugar
3 TBSP all-purpose flour
2 TBSP margarine
1/3 cup chopped nuts
Mix together the sugar, flour and margarine. Add nuts. Sprinkle over banana bread batter in loaf pan before baking.
