Because the oven was otherwise occupied for the better part of the evening, with a very important project, dinner tonight had to be quick and easy.
I found these salmon pinwheels in the market today. They had some stuffed with crab and lobster, and some stuffed with crabmeat florentine, and because it's just not fair to ask anyone in this house to choose between lobster and spinach, we got a package of both. Fortunately, the price was absolutely right. So right that the only way we could have gotten it cheaper would have been to hide it under our shirts on the way out.
I whipped up a lemon dill yogurt sauce, some roasted garlic angelhair alfredo (low carb, if you can believe that), and some sugar snap peas, and VIOLINS!
The bottle of the evening was this...
This is one of my favorite wines ever. It's a Chester county, Pennsylvania wine--made not too far from here at all, so it gives you the kick of knowing that it was made in your own back yard. It's very sweet, very fruity, but when it's served ice cold with something really savory or salty, it's the perfect balance. It's palate freshening, it's not challenging in the least--easygoing as any wine out there--and just delicious.
And it's got a pretty seal on it, too.
