I just got finished baking the lemon meringue pie for tomorrow. It looks yum, if I do say so myself, and it was easy peasy, and even the meringue came out perfectly--washed the bowl and the whisk with white vinegar, remembered the cream of tartar this time, added the sugar slowly. It's all foofy and pretty on top, with those little points of browned meringue that I like. Considering the fact that it's raining hammers and tongs and about 300% humidity, I'm shocked, frankly. I'm hoping that it doesn't bead up overnight.
I made it with my Meyer lemon stash, and from what I was able to lick out of the bowl, it ROCKS. It's silky sweet and only mildly tart, and I think it's going to go nicely with the seafood theme for tomorrow.
Tonight's dinner is just for us--I'm going to make a pork tenderloin with a mustard-molasses-ginger glaze, and a crimini mushroom risotto and Paul's Broccoli (I call it that because it's a special treat for him--I wouldn't care if I never saw a stalk of broccoli again in my life. Yeah. I know. My bad), and I got little mini cheesecake thingies for our dessert. And yanno, I think we even have a bottle of wine in the basement...
