These cupcakes have fresh squeezed orange juice in them. And orange zest which, I have learned, my husband does not like. He likes the cupcakes, but believes he'd like them more if they did not contain zest.
They are filled with an orange pudding that also contains fresh orange juice and orange zest.
A thin layer of orange marmalade is spread over the top, then a layer of ganache.
(btw, check out that deformed baking cup! I ended up with two boxes of baking cups that were almost all in varying degrees of deformity, requiring me to double up on them so as to not have cupcakes leaking out.)
Here's a shot of the filling, though the cake and the pudding are similar colors and therefore difficult to distinguish. A very small amount of turmeric helps make these cupcakes such a lovely color.
These are fantastic, but labor intensive. I may not make them very often, given all of the grating, juicing, chilling, and stirring of hot pudding.
