Not at the same meal!
Cooking at my mother's is like the antithesis of Iron Chef. No onions, not many seasonings, brown oregano (ew!), limited pans, etc.
However, I managed to whip up a decent scratch meal of spagetti and meatballs. This is not the ideal recipe, but it worked.
Ingredients:
Meatballs:
1 lb ground beef
1/4 c grated parmesean
1 c breadcrumbs
1 egg
Garlic salt and italian seasoning
Sauce (I was so ashamed of this!):
1 jar marinara sauce
1 small can diced tomatoes
Something that might have been an onion, chopped, about 2 tablespoons
3 garlic cloves, chopped
Butter
Garlic salt & italian seasoning
White cooking wine
Sweat the onion & garlic in the butter until soft. Add the jar of sauce and the canned tomatoes and a splash of wine. Add garlic salt and italian seasoning to taste. Simmer
Meanwhile, mix the meatball ingredients. Form into about 16 small balls. Add to the simmering sauce, return to a simmer. Cook for 30 minutes, or until no longer pink in the middle.
I also made a standing rib roast
Ingredients:
1 standing rib roast (mine was 6lb)
3 cloves chopped garlic
2 tablespoons kosher salt
Bring roast to room temperature (about 2 hours on the counter)
Preheat oven to 450
Pat dry, then coat with the garlic and kosher salt
Insert thermometer of your choice (I like the probe kind with the separate readout)
Put roast in a shallow pan, then into the oven
After 15 minutes, lower heat to 350 (don't touch the door!)
Continue to cook until thermometer reads 115.
Remove roast, cover with foil for 20 minutes.
Carve and yum!
(This makes it rare/medium rare. Cook longer at your own risk!)
