Ingredients:
- 1 small zucchini, chopped (1/2 cup)
- 1 large tomato, chopped (1 cup)
- 1/4 cup chopped onion
- 1/3 cup grated Parmesan cheese
- 1/4 cup Bisquick Heart Smart® mix
- 1/2 cup low-fat milk of choice (soy, rice, dairy, almond, you know the drill by now)
- 1/2 cup fat-free egg product or 2 eggs
- 1/4 teaspoon salt (optional)
- Dash pepper
Directions:
- Heat oven to 400°F.
- Lightly spray 9x5-inch (1 1/2-quart) glass loaf pan with cooking spray.
- Sprinkle zucchini, tomato, onion and cheese in dish.
- In medium bowl, stir remaining ingredients until blended.
- Pour over vegetables and cheese.
- Bake 30 to 35 minutes or until knife inserted in center comes out clean.
- Cool 5 minutes before serving.
