Easy Garden Bake

Ingredients:

  • 1 small zucchini, chopped (1/2 cup)
  • 1 large tomato, chopped (1 cup)
  • 1/4 cup chopped onion
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup Bisquick Heart Smart® mix
  • 1/2 cup low-fat milk of choice (soy, rice, dairy, almond, you know the drill by now)
  • 1/2 cup fat-free egg product or 2 eggs
  • 1/4 teaspoon salt (optional)
  • Dash pepper 
Directions:
 
  1. Heat oven to 400°F.
  2. Lightly spray 9x5-inch (1 1/2-quart) glass loaf pan with cooking spray.
  3. Sprinkle zucchini, tomato, onion and cheese in dish.
  4. In medium bowl, stir remaining ingredients until blended.
  5. Pour over vegetables and cheese.
  6. Bake 30 to 35 minutes or until knife inserted in center comes out clean.
  7. Cool 5 minutes before serving.
