- Use at least a four quart crock pot.
- Plug in your crockpot and turn to low.
- Add an entire half gallon of milk of your choice--cow, goat, soy, almond, rice, etc. (I used soy)
- Cover and cook on low for 2 1/2 hours.
- Unplug your crockpot. Leave the cover on, and let it sit for 3 hours.
- When 3 hours have passed, scoop out 2 cups of the warmish milk and put it in a bowl.
- Whisk in yogurt starter/probiotics OR 1/2 cup of store-bought live/active culture yogurt of your choice. (I did it the easy way and used 1/2 cup of store-bought plain yogurt. I was too impatient to try this to see if it would actually work to order probiotics online and then wait for them to show up. Use soy if you want this to be vegan.)
- Dump the bowl contents back into the crockpot.
- Stir well to combine.
- Put the lid back on your crockpot.
- Keep it unplugged, and wrap a heavy bath towel/beach towel all the way around the crock for insulation.
- Go to bed, or let it sit for 8 - 12 hours.
- When yogurt has thickened place into glass or plastic containers and keep chilled.
You can use low fat/no fat milk with this recipe. If you would like a thicker yogurt, add one packet of unflavored gelatin to the mix after stirring in the yogurt with active cultures. (Choose wisely if you want this to remain vegan. You could also use tapioca starch, but that's not exactly easy to find.)
You can add dried fruit, nuts, honey, syrup, vanilla extract, jams, etc. You can also blend with frozen fruit of your choice.
Your fresh yogurt will last 7-10 days if you have used dairy. It will last three to four weeks if you've used soy.
Save 1/2 cup as a starter to make a new batch.
