Low Fat Asian Crockpot Chicken

Ingredients
1 Large onion, chopped2 stalks Celery, chopped2 Medium carrots, quarted lengthwise1 Red pepper1 lb Boneless, skinless chicken breast, cut into pieces1 tbsp Fresh ginger, finely chopped2 Garlic cloves, crushed1/4 cup Orange juice1 tspCornstarch dissolved in 1 tsp waterPreparation

Coat the inside of crockpot with no-stick spray.  Place vegetables on bottom, then lay chicken pieces on top. Combine ginger, garlic, orange juice and soy sauce. Pour over chicken and vegetables.

Cook for 6-8 hours on low. Add cornstarch slurry about 30 minutes before the end of cooking to thicken the juices.
