Last night was Fried Chicken and Football night!
Chile Fried Chicken
Mix sour cream, milk, cumin, salt, pepper, and a chopped and roasted chile pepper with chicken pieces. Refrigerate overnight. Coat in flour and fry in hot oil.
Served with the best potato skins ever. Russet potatoes rubbed with oil and salt, baked, halved, and hollowed. Filled with butter, cheese, scallions and bacon, then broiled until the cheese melts. Topped with sour cream.
Last week I made shrimp scampi and shrimp with vodka creme sauce. For the shrimp scampi, heat olive oil, garlic, and thinly sliced shallots over medium low heat until golden. Increase heat to medium, add shrimp and saute. The vodka creme sauce is a little more complex and I don't remember it exactly but I think it involves sauteeing onions, adding tomato paste, browning, then adding cream. Add cut up shrimp and vodka together just before sauce is done so shrimp doesn't overcook.
Tonight is cheddar cheese soup night. Cook in butter until soft diced onions, carrots, and celery. Add flour. Add stock, cook until thickened. Blend. Add cream and cheese on low heat so soup does not separate. Thin with stock if necessary. Top with croutons, ham, or broccoli.
