Maybe not too bad, given that I used olive oil. BUT.

Quick and Easy Chicken Tenders


Zucchini Shoestrings (pdf, highly, highly delicious)

1 very large zucchini or 2 medium
1 t salt (I used fake salt, slight lingering aftertaste, oh well)
rosemary (I only had dried)
1/2 cup olive oil
2 TB flour

Cut the squash lengthwise into halves, and then
cut into 1/4 inch slices, then cut those into 1/8.
Sprinkle and toss with salt in a colander and set
in the sink to drain for 30 minutes. After draining,
squeeze out as much water as you can with
your hands. Heat oil in a skillet-you want the oil
very hot, but not smoking.. Toss zucchini with
flour in a bowl, then add it to the oil in batches.
Cook for about 5 minutes until zucchini is just
golden, then toss in a few leaves of rosemary.
Cook for another minute until zucchini is golden.
Drain zucchini on paper towel and serve right
away.

Veggie salad:

chopped tomato
chopped cucumber
fresh corn cut from the cob (steamed)
chopped carrot
a couple of green onions chopped
olive oil
balsamic vinegar
