saphireone and I are hosting my family's Christmas this year. This is going to bring some 13 people of varied political opinions together in one decently but not opulently sized house, with no football game to distract.
Dangerous enough.
We're also breaking with standard Christmas fare, a bit. Instead of the regular roast beef with Yorkshire pudding, leg of lamb, and/or turkey, I'm serving Corned Beef and Cabbage. I start with brisket, corn it myself, and boil vegetables alongside. It's a bit out of the regular Christmas fare.
Luckily, my brother is bringing a turkey for deep frying. We loves our deep-fried turkey. This is a huge relief to me, as I'm not sure that 6 pounds of brisket would turn into 13 servings of dinner. It seems like it should, but after pickling and boiling, it seems to all but disappear.
As a host who is a spawn of my mother, I can't help but to worry that there be both enough food for everyone, and enough variety. I'll probably make mashed potatoes and dressing to match the turkey, and cabbage, potato, and the like to match the corned beef. I'll have beets, cranberry relish and green been casserole for color.
Cheese plate, olives, and salami and crackers as starters.
Fruitcake (made from scratch, thankyouverymuch. Tasty, non-florescent and liquored all up.) and a boysenberry pie, if memory serves, so my desserts might be a little light.
Chicken nuggets and nuked Mac-and-Cheese for the under 5 crowd.
Am I missing something?
