Normally, so would I (big stickler for chronological reading), but if you're not sure you'll like Pratchett, ami, then starting with Equal Rites or Mort is a bigger incentive to continue (in order then).
My recommendation would be to start with the Watch novels. They were what hooked me on Discworld - I enjoyed the others, but with these I fell in love.
I know most later readers say so, esp. men, but I didn't like the middle Watch novels. Too conventional. Loved Clay Feet again, but it's very late in the oeuvre, and reading the earlier books after these takes away the cumulative A-HA enjoyment. When characters are already friends who used to be foes in earlier novels, for example.
(but yeah, great book - only - what I said below applies, it takes away enjoyment of the earlier novels to see the characters at their more advanced stages)
