My current favorite quick-and-cheap meal is one I resisted and dismissed as scary-yuck for over 2 years.

Ramen with Egg and Veggies is from b1uemorpho and it's AWESOME.

I just had a bowl of it w/ stir-fry veggies (with the red pepper picked out). Mmmm!
