Turkey Casserole

3 c brown rice, cooked up into 6 c of cooked rice
3-6 c diced leftover turkey
2 diced onions
2 diced carrots
3-5 stalks finely minced celery
1 small can diced, sliced water chestnuts
2 t salt
1 t pepper
3/4 t ground sage
3/4 t celery seed
1/4 t ground mustard
2 cans cream of celery soup
1 can cream of chicken soup

For topping:
4 slices whole wheat bread
1 T vegetable oil
1/2 t salt
1/2 t pepper

Stir first group together well, put into large (11x15?), shallow (2" deep) glass baking dish. Cover. Bake at 350 for 1 hour or a bit more.

Grind up 4 slices whole wheat bread in the food processor for bread crumbs, add oil, salt, pepper, grind and mix well.

Remove cover/foil from casserole, sprinkle with bread crumbs, return to oven for 5-10 minutes, remove from oven, serve.
