I could give New Orleans suggestions, but you're right, there's a ton that's good there, so for his needs there's probably no point in picking out specific places. It really just depends what part of town he's in.

Baton Rouge: Parrain's. It's seafood. Lots of fried seafood, but also some non-fried stuff with amazing sauces. He should also order boudin balls. The Chimes is owned by the same people, not as great a food selection (it's sorta sports bar-ish) but they have a good beer selection, and also serve the same boudin balls. There's an area called Town Center (corner of Jefferson & Corporate) and it has several restaurants, one of them being Zea's. He should eat at Zea's, and he should get the duck empanadas. (There's actually also some Zea's locations in the New Orleans area...that's where the chain started).

Lake Charles: Darrell's. It's a bar, but they serve the most amazing sandwich in the world. What he wants is the "Darrell's Special". It is ham, turkey, roast beef, provolone, and american cheese. also comes with lettuce (i get it without). AND it has the most amazing jalapeno mayo on it, as well as a gravy that's made from the roast beef drippings. simple ingredients that combine to make an amazing sandwich. They are not open on Sundays. 119 West College Street. If he orders it to-go, get the mayo and gravy on the side so it doesn't get soggy. That's all i got for Lake Charles.

I have not lived in Natchitoches since boarding school, so that's over 10 years, and I don't really remember much. I think there was a place called Mariner's? And maybe The Landing? Anyway, Front Street is the main drag, I think that's where The Landing is.

Shreveport has luckily never been a home to me. But I googled it, and I recognize some stuff. There's a Monjuni's (two actually), it's Italian, and I suggest the Aurora sauce on anything (it's a mix of alfredo sauce and their marinara sauce, and it's outstanding...this has a Baton Rouge location as well). There's a Superior Grill (which also has a Baton Rouge location) and it's Mexican.

Also, Raising Cane's is available in all of these cities. I suggest he give it a shot. Early in the trip, so then he can have it again and again and again :D

OMG awesome!! Thank you so much for the time you put into this. Now I really wish I was the one going on this trip... I would just eat my way through Louisiana!
