Today I accomplished something that has heretofore eluded me. I have always been the type to enjoy salad sandwiches, but have not been able to enjoy any sort of salad sandwich for some time.
It has been a summer of mystery, as usual. Summertime always renews my interest in Christie murder mysteries. I have been obsessed with them since the fourth grade when I read "And Then There Were None." A summer of Christie mysteries also feeds my obsession with all things British. Yesterday, I decided I must find some way to make a vegan equivalent of egg salad, tuna salad, chicken salad, or fish paste sandwich. I found a few recipes online and decided to try my hand. Today, with the help of some perfectly textured tofu, success was mine. Oh my! It was absolute heaven! Tuna, egg, and chicken salad all taste rather similar, and the taste is actually quite easy to emulate. My lovely, newly discovered, crumbling tofu, some celery, green onion, pickle, mustard, vegannaise, a dash of curry powder, paprika, freshly ground S&P, and there you have it! Spread it on some dry light rye toast and ooo lala! Scrumptious! Deliciuex! Ah... Yum.
I have been encouraged by this culinary success to tackle my final veg cooking obstacle. Decent tasting dairy-free cheesecake. If I can make a delicious salad sandwich, anything is possible! Mwuahahahaaha!
